Winemaker Ashleigh Barrowman honed her craft working vintages in Europe, and this wine particularly is impressed by her time within the Jura. Biodynamic fruit from the Wrekin Winery within the Southern Valleys kinds the premise of this electrical wine. Sous voile (underneath veil) is the time period used within the Jura for wines which age underneath a movie of flor yeast much like what one encounters in Jerez. On this case it implies that this wine—only a single barrel—was allowed to age underneath flor for 3 years with out being topped up.
Burnished gold. Densely layered, complicated nostril with each developed nutty, butterscotch aromas and recent, pure floral talcum. Fascinating.
